Distinctive handpicked botanicals are collected by our expert forager.

Using the same botanicals as Premium we gently lift the alcohol to 57%.

The added alcohol creates a more rounded and bigger flavour without any alcohol burn. Creating a beautifully balanced gin which incredibly doesn't feel as strong as it actually is.

Notes from the Distiller...…..

"We steep and boil wild Speyside Juniper, Sitka Tips (Douglas Fir First Growth), Whalley Lancs, Sweet Flag (Tangerine Root), Spotborough S.Yorks and Sweet Cicely (anise), Calder Valley W.Yorks.

To this we crafted rich, high quality London Dry botanicals Juniper, Coriander Seed, Cinnamon Quills, Orange Peel, Lemon Peel, Cardoman, Nutmeg, Myrrh Gum, Orris Root, Angelica Root

We distil the ingredients separately to extract the best characteristics from each botanical. The wild foraged botanicals are steeped overnight for a minimum 12 hours in 96% alcohol and then boiled (steep & boil method).

The other sourced botanicals are then ‘vapour infused’ to extract the finer more delicate, light volatiles. This gives Defiance its wonderful and unique depth of flavour. An earthy backbone gives way to fresh citrus and wonderful notes of anise.
